بوی کتلت مادر آنقدر خوب بود و من همیشه آنقدر گرسنه بودم که اغلب سلام را فراموش می کردم. چهره ی خسته اما همیشه خندانش که و توی قاب در ظاهر می شد، در جواب «آخ جون، کتلت» پاسخ «علیک کتلت!» را می شنیدم، پاسخی که تا مدت ها مفهوم آن را درک نمی کردم.

کتلت های چیده شده در دیس، گوجه فرنگی های خرد شده ی توی بشقاب و نان تازه ی لواش، منتظر سیب زمینی های در حال سرخ شدن روی اجاق، و ما، در انتظار سفره ای که خوشمزه ترین غذای دنیا را توی خودش جای دهد.

اصلأ کتلت، همه چیزش سرشار از خاطره است: از نحوه ی درست کردنش بگیر تا بوی مست کننده اش و لذت خوردنش که فکر می کردی هیچ وقت کافی نیست، که فرقی نداشت چند تا کتلت باشد و چند نفر آدم، که انگار هیچ وقت سیر نمی شدی از خوردن آن…

کوچکتر که بودم، وقتی قد و قامتم به زحمت به ارتفاع اجاق گاز می رسید، کنار مادر می ایستادم و حرکت انگشت هایش را در برداشتن گلوله ای از مواد و صاف کردن آن روی کف دست چپش با انگشت های دست مخالف دنبال می کردم. از صدای «جلیز» تکه گوشتی که توی تابه مى افتاد لذت می بردم، و همیشه ی خدا، از او می خواستم که کتلت کوچولویی مخصوص من درست کند؛ چقدر آن کتلت کوچولو خوشمزه تر از بقیه بود، چقدر همه ی کتلت های مادر دلچسب و خوشمزه بودند.

بزرگتر که شدم، در دوران دانشجویی، کتلت های مادر، توشه ی راه تقریبا همیشگی ام را، در رستوران بین راهی قره چمن یا توی خوابگاه دانشجویی با دوستانم می بلعیدیم! با همان سیب زمینی های سرخ شده ی درشت و گوجه فرنگی های همراهش و همان نان لواش لطیف کنارش.

بعد از ازدواج، سال ها طول کشید تا کتلت خوب درست کردن را یاد بگیرم، فرمول های مختلف را امتحان می کردم تا کتلت هایم وا نرود، سفت نشود، شور یا بی نمک نباشد و خلاصه کمی شباهت به کتلت های مادر را داشته باشد.

بی فایده بود، بی فایده است. سیب زمینی پخته یا خام یا هر دو، تخم مرغ کمتر یا بیشتر، آرد نخودچی یا نشاسته ی ذرت…. هیچ کدام مؤثر نیست. هیچ کتلتی در دنیا مزه ی کتلت های مادر را نمی دهد.

بعد از بیست سال، کتلت هایی که درست مى کنم را همه دوست دارند جز خودم. این روزها، قلب مادر بیمار است، قامتش خمیده شده و دستانش لرزان. مدت هاست توانایی ساعت ها پای اجاق ایستادن و کتلت سرخ کردن را از دست داده است. خجالت می کشم توی این سن و سال از او بخواهم برایم کتلت درست کند، اما…. آرزو دارم تنها یک بار دیگر، بچگی هایم را مزه کنم، با خوردن کتلت دست پخت مادر.

کتلت یک غذا نیست، یک شیوه ی زندگی است و هیچ کتلتی در دنیا هیچ وقت، مزه ی کتلت مادر را نمی دهد. اطمینان دارم این حس مشترک همه ی آدم های روی زمین است.

Reza, do u think Carter pushed him out because of his human rights agenda or because of the cartels and israeli lobby going after him? The big difference between the two for me is in whether Carter ousted him because of his own agenda or was he a tool like all other presidents for other people's agenda?

The announcer must’ve been a gymnast cuz he twists n turns to make Shah look like an Angel and Gods gift to Iran. It is so sad and disappointing that after 5 decades we as a nation are unwilling and incapable accepting the truth. He did some good things but also caused many terrible things. The rooted corruption where everything of value was funneled thru his family and him. The lack of democracy and democratic elections, his insistence on denying torture while Amnesty International had evidence and despite his promise to US administration to stop it n eventual release of political prisoners that never materialized. Reza that is really interesting. I was wondering why the WH was making war plans a few days before changing presidency. It is unprecedented! Amazing how Iran plays into the WH politics!! Seems like everyone in the world has figured this administration out since it has so many levers. Each group is pulling it their own way!
